Tempeh Salad

I had something similar to this at the Farm and really enjoyed it. It's along the lines of chicken or tuna salad, and full of protein. I even brought some home for Matt so that, through careful analysis (ie eating it), we could try to replicate it. I think we came pretty close. Here's the recipe we came up with:
Tempeh Salad

8 oz tempeh
3/4 cup mayo (can use soy--we made our own, more on that later--or regular)
1-2 tsp fresh dill (may substitute dried)
1/2 cup finely minced onion
1/2 large carrot, finely minced
1/2 stalk celery, finely minced

Crumble tempeh with your fingers or a fork. Stir in mayo, dill, and minced vegetables. Add salt to taste.

This is good on sandwiches or with crackers or just plain in a bowl. It would probably also be good over lettuce.
