OK, so I don't know if buttermilk is actually what I had, or if it was just slightly soured cream. But despite its failure to turn into butter, I also didn't want it to go to waste. So instead we substituted it for kefir in our favorite pancake recipe and it turned out fine. However, I think we're the only people I know who would decide that pancakes made with heavy cream weren't rich enough-- that they really called for some butter and sugar in the form of caramelized bananas...
And boy, were we right.
