Mushroom-Sage Gravy
2 cups of mushrooms, chopped small5-8 Tbsp. butter2-4 Tbsp. flour1 Tbsp. dried sage1/2 cup or so of milkMelt 2 Tbsp. butter in a frying pan. Saute mushrooms until golden brown. Add sage. Scrape mushrooms to one side of the pan and melt remaining butter. Whisk in flour until desired consistency is reached; do the same for milk. Incorporate mushrooms and make any adjustments with flour or milk.
