Susan asked if I thought using a different cheese for the Macaroni and Disappointment below would have made a difference. I think it probably would have. If I made it again, I might use sharp cheddar--maybe 2 cups--with possibly a handful of pepper jack thrown in for spice. I would probably also add a healthy amount of sour cream. I like my mac and cheese creamy and tangy, and it's never going to be a lowfat dish anyway, so you might as well go all out.
